Should anonymous donors be counted in the plate total?

Count them if your wall shows a plate reading Anonymous in the donor's level. Leave them out if anonymous gifts are not displayed at all. Either rule is fine, but apply the same one across the whole campaign so the plate count and the published donor list agree.

Does the calculator recommend how many spare donor plates to order?

No. It adds the spare figure you type and suggests nothing. For donor walls, a spare is usually a blank filler or a duplicate of a title plate. Engraved name plates cannot be made ahead as spares, because each one depends on a donor who has not yet given.
